Local Grains
Our grain is sourced from small scale Utah wheat growers. We strive to source the best quality grain we can get while supporting small agriculture and moving agriculture in an organic and regenerative direction.
Natural Fermentation
Flour ground from whole grains, this allows all of the nutrients of the grain to be utilized for the body. Our meadows mill is used every morning to grind flour to make that days bread.
Freshly Ground Flour
Every bread and pastry is fermented using a natural sourdough Levain. We do a long room temp, Fermentation on our bread in order to develop flavor and make the bread easier to digest.
